Ingredients
- 1 cup creamy peanut butter
- 1/4 cup butter, softened
- 1/2 teaspoon vanilla extract
- 1 1/4 cups powdered sugar
- 2 cups Rice Krispies
- 10 ounces semi-sweet chocolate melting wafers
- 1 teaspoon coconut oil
- Flake sea salt
Instructions
- Line a baking sheet with parchment paper and set aside.
- In a medium bowl, blend the peanut butter, softened butter, and vanilla extract until smooth.
- Gradually add powdered sugar and mix until well combined.
- Fold in Rice Krispies until evenly incorporated. Optionally, add more Rice Krispies for extra crunch.
- Use a scoop to form the mixture into 1-inch balls and place them on the prepared baking sheet.
- Freeze for 15 minutes to firm up.
- Melt chocolate wafers with coconut oil until completely smooth.
- Dip each ball into the melted chocolate, shaking off the excess, and return to the parchment.
- Sprinkle sea salt on top and refrigerate for 10 minutes to set.
Notes
Use softened butter for a smooth mixture. Freeze before dipping in chocolate to maintain shape.
