Lemon Greek Chicken and Potatoes

A delightful dish that’s easy to prepare, bursting with flavor, combining tangy lemon, fragrant herbs, and tender chicken with golden potatoes, perfect for any day of the week.

Ingredients

  • 1/2 cup olive oil
  • Juice of 3 lemons
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons dried oregano
  • 1 teaspoon thyme
  • 2 teaspoons garlic powder
  • 5 medium yellow-fleshed potatoes, cut into wedges
  • 10 garlic cloves, smashed
  • 6 skin-on, bone-in chicken drumsticks and legs

Instructions

  1. Preheat the oven to 400°F and move the oven rack to the top third of the oven.
  2. In a bowl, combine olive oil, lemon juice, salt, pepper, dried oregano, thyme, and garlic powder. Mix well.
  3. Place the chopped potatoes in a large casserole dish and add smashed garlic cloves. Pour half of the olive oil mixture over the potatoes and toss to coat.
  4. Arrange the chicken on top of the potatoes and pour the remaining olive oil mixture on top. Use your hands to spread the seasonings evenly over the chicken and potatoes.
  5. Bake for about 70 minutes, until the potatoes are tender and the chicken is golden brown with an internal temperature of 175°F.

Notes

For extra crispiness, broil the chicken for a few minutes at the end of baking. Use fresh lemons for the best flavor. Adjust seasoning according to taste.
