Ingredients
- 1/2 cup olive oil
- Juice of 3 lemons
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 tablespoons dried oregano
- 1 teaspoon thyme
- 2 teaspoons garlic powder
- 5 medium yellow-fleshed potatoes, cut into wedges
- 10 garlic cloves, smashed
- 6 skin-on, bone-in chicken drumsticks and legs
Instructions
- Preheat the oven to 400°F and move the oven rack to the top third of the oven.
- In a bowl, combine olive oil, lemon juice, salt, pepper, dried oregano, thyme, and garlic powder. Mix well.
- Place the chopped potatoes in a large casserole dish and add smashed garlic cloves. Pour half of the olive oil mixture over the potatoes and toss to coat.
- Arrange the chicken on top of the potatoes and pour the remaining olive oil mixture on top. Use your hands to spread the seasonings evenly over the chicken and potatoes.
- Bake for about 70 minutes, until the potatoes are tender and the chicken is golden brown with an internal temperature of 175°F.
Notes
For extra crispiness, broil the chicken for a few minutes at the end of baking. Use fresh lemons for the best flavor. Adjust seasoning according to taste.
