Grilled Rack of Lamb

A fantastic dish that impresses everyone, perfect for gatherings or special occasions. Tender meat with smoky flavor from the grill makes for a delightful experience.

Ingredients

  • 2 lb rack of lamb
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 1 teaspoon kosher salt
  • 1/2 teaspoon crushed black pepper

Instructions

  1. In a small bowl, combine the olive oil and lemon juice.
  2. Brush the entire surface of the lamb with the olive oil mixture.
  3. Sprinkle the lamb liberally with kosher salt and black pepper.
  4. Heat your grill to high heat, around 400°F.
  5. Place the lamb on the grill grates with the bone side up.
  6. Grill the lamb for 4-5 minutes with the lid open.
  7. Flip the rack over and grill the other side for another 4-5 minutes.
  8. Lower the grill heat or move the rack to indirect heat.
  9. Close the lid and cook for an additional 10-15 minutes, depending on the size of the lamb.
  10. When the internal temperature reaches 125°F, remove the lamb from the grill.
  11. Transfer the lamb to a platter and cover it with foil. Allow it to rest for 10 minutes.
  12. Cut the lamb between the bones and serve immediately.

Notes

Allow the lamb to come to room temperature before grilling. Use a meat thermometer for perfect doneness. Marinate for extra flavor.
