Ingredients
- 2 lb rack of lamb
- 1/4 cup olive oil
- Juice of 1 lemon
- 1 teaspoon kosher salt
- 1/2 teaspoon crushed black pepper
Instructions
- In a small bowl, combine the olive oil and lemon juice.
- Brush the entire surface of the lamb with the olive oil mixture.
- Sprinkle the lamb liberally with kosher salt and black pepper.
- Heat your grill to high heat, around 400°F.
- Place the lamb on the grill grates with the bone side up.
- Grill the lamb for 4-5 minutes with the lid open.
- Flip the rack over and grill the other side for another 4-5 minutes.
- Lower the grill heat or move the rack to indirect heat.
- Close the lid and cook for an additional 10-15 minutes, depending on the size of the lamb.
- When the internal temperature reaches 125°F, remove the lamb from the grill.
- Transfer the lamb to a platter and cover it with foil. Allow it to rest for 10 minutes.
- Cut the lamb between the bones and serve immediately.
Notes
Allow the lamb to come to room temperature before grilling. Use a meat thermometer for perfect doneness. Marinate for extra flavor.
