Fresh Vegetable Tortilla Roll Ups

Ingredients

  • 1 cup diced vegetables (broccoli, carrots, red bell pepper)
  • 4 ounces softened cream cheese
  • 1/3 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried dill
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 2 large flour tortillas (burrito size)
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons sliced green onions

Instructions

  1. Prepare the Vegetables and Ingredients: Choose and chop your favorite veggies into small pieces. Allow the cream cheese to soften at room temperature.
  2. Mix the Cream Cheese Filling: In a medium bowl, combine the softened cream cheese with mayonnaise, garlic powder, dill, salt, and pepper. Mix until smooth.
  3. Prepare and Fill the Tortillas: Warm the tortillas in the microwave for 15-20 seconds. Spread the cream cheese mixture evenly over each tortilla, then sprinkle the minced veggies, cheese, and chopped onion on top.
  4. Roll and Secure the Tortillas: Starting at one edge, roll the tortilla tightly to the opposite side. Secure with toothpicks and chill in the freezer for 20 minutes or overnight in the fridge.
  5. Slice and Serve: Remove toothpicks, slice each roll into pinwheels, and arrange on a platter.

Notes

These roll ups can be served cold or at room temperature and are suitable for vegetarians. They can also be made with whole wheat tortillas for a healthier option.
