Ingredients
- 1 cup diced vegetables (broccoli, carrots, red bell pepper)
- 4 ounces softened cream cheese
- 1/3 cup mayonnaise
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried dill
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 2 large flour tortillas (burrito size)
- 1/2 cup shredded cheddar cheese
- 2 tablespoons sliced green onions
Instructions
- Prepare the Vegetables and Ingredients: Choose and chop your favorite veggies into small pieces. Allow the cream cheese to soften at room temperature.
- Mix the Cream Cheese Filling: In a medium bowl, combine the softened cream cheese with mayonnaise, garlic powder, dill, salt, and pepper. Mix until smooth.
- Prepare and Fill the Tortillas: Warm the tortillas in the microwave for 15-20 seconds. Spread the cream cheese mixture evenly over each tortilla, then sprinkle the minced veggies, cheese, and chopped onion on top.
- Roll and Secure the Tortillas: Starting at one edge, roll the tortilla tightly to the opposite side. Secure with toothpicks and chill in the freezer for 20 minutes or overnight in the fridge.
- Slice and Serve: Remove toothpicks, slice each roll into pinwheels, and arrange on a platter.
Notes
These roll ups can be served cold or at room temperature and are suitable for vegetarians. They can also be made with whole wheat tortillas for a healthier option.
