Ingredients
- 1 lb macaroni
- 1/4 cup butter
- 1/4 cup flour
- 2 1/2 cups low-fat milk
- 2 1/2 cups sharp cheddar cheese, shredded
- Salt and pepper, to taste
Instructions
- Bring a pot of salted water to a boil over medium-high heat. Add the pasta and cook until al dente, approximately 8 minutes.
- In a medium saucepan, melt the butter over medium-high heat. Sprinkle the flour over the butter and whisk to combine, cooking for 2-3 minutes until golden.
- Slowly add the milk to the butter/flour mixture while whisking and bring to a simmer. Cook until slightly thickened, approximately 4-5 minutes, avoiding boiling.
- Stir in the shredded cheese and remove from heat, stirring until thoroughly combined.
- Drain the pasta (do not rinse) and fold it into the cheese sauce, stirring to combine. Season with salt and pepper as needed. Serve immediately.
Notes
For extra flavor, consider adding garlic powder or mustard powder to the cheese sauce. Customize by adding cooked veggies like broccoli or spinach.
