Ingredients
- 8 oz crimini mushrooms
- 1 tablespoon olive oil
- 16 oz potato gnocchi
- 1/2 cup chicken broth
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- 5 oz fresh spinach
- 1/4 teaspoon salt, to taste
- Coarsely ground black pepper, to taste
- Red pepper flakes, to taste
Instructions
- Heat the olive oil in a large skillet. Add the sliced mushrooms seasoned with salt and pepper. Cook until they are lightly browned and softened, then remove half of the mushrooms from the skillet.
- In the same skillet, add the gnocchi, chicken broth, heavy cream, minced garlic, Italian seasoning, and smoked paprika. Bring everything to a boil over medium heat and cook for about 5 minutes.
- Add the fresh spinach to the skillet and stir until it wilts.
- Season with salt, pepper, and red pepper flakes. Top with the reserved mushrooms before serving.
Notes
For extra flavor, try adding a splash of white wine along with the chicken broth. Make sure not to overcook the gnocchi; it only needs a few minutes until it floats to the top. Feel free to add other veggies like bell peppers or zucchini to enhance the dish. Serve with grated Parmesan cheese or fresh herbs.
