Chicken & Gravy

Ingredients

  • 2 lbs. skinless chicken breast
  • 2 cups chicken broth
  • 2 packets chicken gravy mix
  • Mashed potatoes (for serving)

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Pour in the chicken broth, then cover the crockpot with its lid.
  3. Cook on high for about 180 to 240 minutes, or until the chicken easily pulls apart with a fork.
  4. After cooking, pour 2 cups of the broth from the crockpot into a saucepan. Discard any remaining liquid.
  5. Add the two packets of chicken gravy mix into the saucepan and whisk them together well.
  6. Simmer on low heat until the gravy thickens.
  7. While the gravy simmers, remove the chicken breasts from the crockpot and shred the chicken into large pieces.
  8. Serve the shredded chicken and the thickened gravy over warm mashed potatoes.

Notes

For a thicker gravy, let it simmer a little longer. You can also add vegetables like carrots and celery for added nutrition.
