Ingredients
- 2 lbs. skinless chicken breast
- 2 cups chicken broth
- 2 packets chicken gravy mix
- Mashed potatoes (for serving)
Instructions
- Place the chicken breasts in the crockpot.
- Pour in the chicken broth, then cover the crockpot with its lid.
- Cook on high for about 180 to 240 minutes, or until the chicken easily pulls apart with a fork.
- After cooking, pour 2 cups of the broth from the crockpot into a saucepan. Discard any remaining liquid.
- Add the two packets of chicken gravy mix into the saucepan and whisk them together well.
- Simmer on low heat until the gravy thickens.
- While the gravy simmers, remove the chicken breasts from the crockpot and shred the chicken into large pieces.
- Serve the shredded chicken and the thickened gravy over warm mashed potatoes.
Notes
For a thicker gravy, let it simmer a little longer. You can also add vegetables like carrots and celery for added nutrition.
